Lately I’ve been on a chia seed kick and after enjoying the Chia Seed Pudding from True Food Kitchen, I had to recreate something similar to enjoy at home. After a couple tries, I came up with a satisfying recipe that serves as an excellent dessert packed with health benefits or a sweet start for breakfast.
*This recipe is dairy-free and gluten-free.
1 Cup Almond Milk
2 Tbsp Coconut Cream
1 Tsp Vanilla
½ Tsp Cinnamon
1 Ripe Medium Banana
¼ Cup Chia Seeds
Mix all ingredients except chia seeds in a food processor until smooth. Gently stir the chia seeds in and set in the refrigerator overnight, covered. Enjoy the next day as is, or topped with berries, pomegranate seeds and coconut!
